A Mexican-style restaurant and bar will open on Washington Ave by the owner of Stub & Herbs, in place of former restaurant Campus Pizza. The restaurant, named Bar Luchador, is set to open in early August, according to the Minneapolis/St. Paul Business Journal. Long-time Stub & Herbs employees Angelo Pennacchio and Regan Haffele will co-own the business with owner Josh Zavadil in an equal partnership. Pennacchio will be president and general manager of Bar Luchador. “We’re trying to give people on a campus a better option when it comes to bar food,” said Pennacchio, reported the Minneapolis/St. Paul Business Journal. There are few options for Mexican food in Dinkytown and Stadium Village, with only chain restaurants like Chipotle and Qdoba offering the cuisine. Bar Luchador will be serving Mexican street food. The building on the same block as Stub & Herbs that was once home to Campus Pizza for 56 years has been empty since March. Pennacchio will complete the interior design changes himself, and the business won’t be using a construction company, said the Minneapolis/St.Paul Business Journal.
