A new Vietnamese inspired café called Bambu is set to open on the University of Minnesota campus this fall.
The cafe will open in Stadium Village at the WaHu apartment building and is owned by University of Minnesota alumni Tiffiny and Hoang Do.
“It’s one of those things where we knew right away that the [University] was one of the areas that we really wanted to place Bamb?,” Tiffiny Do said.
The accessibility of the location to the freeway and the light rail will bring more customers, Hoang Do said.
The cafe is opening after multiple requests came in for a location on University campus, Hoang Do said, adding there a wasn’t coffee shop like Bambu when he attended the school.
Bambu offers a range of Vietnamese-inspired drinks like che, which mixes fruits, vegetables, seeds and tapioca. There is also a beverage option that allows people to customize their own drink.
